The difference here is that: a.) you've considered the fact that even if she identifies as X, it's rare in America for anyone who's family has been here for any length of time to be purely X in their background.
b.) your has genetic diversity in her background. She's an admitted "mutt" as opposed to Anita's strict "Mexican"/WASP mix. Plus, it sounds like your choice of culture was deliberate. I think you know that "Mexican" does not cover ALL Spanish people EVERYWHERE unlike Anita/LKH. (She doesn't even account for the fact that everyone is from somewhere and Anita's mother would have been from a particular place/region in Mexico, which would vary from other places/regions like all countries/places do. Anita/LKH isn't even aware that not ALL Spanish food is spicy!)
c.) Voodoo is a set of beliefs/religious practices. In a magical world, the ability to perform certain rituals within that belief system to a higher standard/with a higher percentage of success could be based on certain "magic" genes, but the entire religion itself shouldn't be trivialized as a magic power of a Specialful Sue character. And yeah, Anita says she inherited "voodoo" from her mom who in turn inherited it from her family/mother-the-voodoo-practitioner. It's a direct line of descent from a carefully crafted 'other' source. It's just not the right 'other'.
(Which is a longer way of saying that genetically inheriting abilities like your character seems to isn't offensive in and of itself. Genetically inheriting an entire religious system as an innate and often evil magic power is ludicrous and possibly offensive to the practitioners of said religion.)
