This is super fascinating to me, especially in regards to real life and my own writing. I'd love to hear more about judo, especially from a (particularly athletic) physicist's perspective.
But in the Anita-verse a normal, or even somewhat Sue-ishly special, person like Anita shouldn't be able to beat down a were-animal, judo or no judo. Even in their human forms, they're blurringly fast, ridiculously durable, and can bench-press small cars. Frankly, between the vampires' powers and the therian powers and both races' complete lack of serious draw-backs or opposition, I'm surprised that humans still rule the AB-verse.
EDIT: And yeah, I totally agree about what type of character Anita is.
